{"id":1052,"date":"2023-11-02T09:24:00","date_gmt":"2023-11-02T09:24:00","guid":{"rendered":"https:\/\/aspiranthealth.com\/?p=1052"},"modified":"2023-10-30T21:25:00","modified_gmt":"2023-10-30T21:25:00","slug":"rich-aubergine-tomato-quinoa","status":"publish","type":"post","link":"https:\/\/aspiranthealth.com\/de\/rich-aubergine-tomato-quinoa\/","title":{"rendered":"RICH AUBERGINE &amp; TOMATO QUINOA"},"content":{"rendered":"<div class=\"wp-block-columns has-background is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\" style=\"background-color:#d3e1ea\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading has-text-align-center\">Serves 2<\/h3>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading\">Ingredients:<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 aubergine<\/li>\n\n\n\n<li>100g quinoa<\/li>\n\n\n\n<li>2 tsp coconut or olive oil<\/li>\n\n\n\n<li>2 cloves garlic<\/li>\n\n\n\n<li>1 large red onion<\/li>\n\n\n\n<li>1 red pepper<\/li>\n\n\n\n<li>400g tomato passata<\/li>\n\n\n\n<li>1 tbsp sundried tomato paste<\/li>\n\n\n\n<li>1\/4 tsp herbes de Provence<\/li>\n\n\n\n<li>2 tsp vegetable bouillon powder<\/li>\n\n\n\n<li>Freshly ground black pepper and salt to taste<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-columns has-white-color has-text-color has-background is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\" style=\"background-color:#2c576f\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading has-white-color has-text-color\">Method<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Pre-heat oven to 190\u00b0C.<\/li>\n\n\n\n<li>Slice the aubergine in half lengthways and scoop out the flesh with a teaspoon, putting the aubergine skins to one side.<\/li>\n\n\n\n<li>Boil the quinoa in 1 tsp bouillon stock and 300ml water until cooked (approx. 10-15 minutes).<\/li>\n\n\n\n<li>Heat the oil in a pan and cook the garlic for 30 seconds before adding the onion and cooking for a further 2 mins.<\/li>\n\n\n\n<li>Add the red pepper and aubergine flesh, cover and cook until they become soft (approx 10 minutes).<\/li>\n\n\n\n<li>Add the passata, herbs, tomato paste, bouillon powder and seasoning and let the mixture simmer for 2 minutes.<\/li>\n\n\n\n<li>Combine the quinoa with the mixture.<\/li>\n\n\n\n<li>Lightly brush the outside of the aubergine skins with oil and fill each with the quinoa and tomato mixture.<\/li>\n\n\n\n<li>Place aubergines in a roasting dish and cover with foil.
