It\u2019s also cheap to make and packed full of immune-boosting antioxidants.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p><\/p>\n\n\n\n<div class=\"wp-block-columns has-background is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\" style=\"background-color:#d3e1ea\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading has-text-align-center\">Serves 4<\/h3>\n\n\n\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading\">Ingredients:<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 tsp olive oil<\/li>\n\n\n\n<li>1 red onion, finely chopped<\/li>\n\n\n\n<li>4 garlic cloves, finely chopped<\/li>\n\n\n\n<li>Ginger \u2013 a thumb-sized piece, finely grated<\/li>\n\n\n\n<li>6 curry leaves (optional)<\/li>\n\n\n\n<li>2 tsp ground cumin<\/li>\n\n\n\n<li>2 tsp ground coriander<\/li>\n\n\n\n<li>1 tsp ground turmeric<\/li>\n\n\n\n<li>2 medium sweet potatoes, cut into chunks<\/li>\n\n\n\n<li>75g red lentils<\/li>\n\n\n\n<li>400ml tin coconut milk<\/li>\n\n\n\n<li>400ml vegetable stock<\/li>\n\n\n\n<li>Fresh coriander, a handful, torn<\/li>\n\n\n\n<li>1 lime, cut into wedges<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-columns has-white-color has-text-color has-background is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\" style=\"background-color:#2c576f\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\">\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\">\n<h3 class=\"wp-block-heading has-white-color has-text-color\">Method<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat the oil in a large pan over a medium heat and cook three-quarters of the onion for 10 mins until softened.<\/li>\n\n\n\n<li>Add the garlic, ginger and curry leaves (if using) and cook for 2 mins.<\/li>\n\n\n\n<li>Add in the spices and cook for 1 min.<\/li>\n\n\n\n<li>Stir in the sweet potato and lentils, then add the coconut milk and stock. Stir well, bring to the boil, then simmer for 15-20 mins until the potatoes and lentils are cooked through. Add a splash of water if it looks a little dry.<\/li>\n\n\n\n<li>Season to taste, then spoon into bowls and garnish with the remaining chopped onion, the fresh coriander, and a lime wedge for squeezing over.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<\/div>\n<\/div>","protected":false},"excerpt":{"rendered":"<p>As the temperature dips, there\u2019s nothing that feels more like a warming hug than a curry.
