Ingredients:

  • 1 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 cup shiitake mushrooms, sliced
  • 4 cups vegetable broth
  • 1 tsp turmeric
  • 1/2 tsp black pepper
  • 1/2 tsp thyme
  • 1 can (400g) diced tomatoes
  • 2 cups chopped kale or spinach
  • Juice of 1/2 lemon
  • Sea salt to taste

Method

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté until soft.
  2. Stir in garlic and ginger, cooking for another minute until fragrant.
  3. Add carrots, sweet potato, and mushrooms, sautéing for a few minutes.
  4. Pour in vegetable broth, turmeric, black pepper, and thyme. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Stir in diced tomatoes and continue cooking until vegetables are tender.
  6. Add kale or spinach and cook for 2-3 minutes until wilted.
  7. Squeeze in lemon juice, adjust salt to taste, and serve warm.
