Ingredients:
- 2 cups cooked cannellini beans
- 2 zucchinis, sliced
- 1 red bell pepper, diced
- 1 red onion, chopped
- 200g cherry tomatoes, halved
- 4 garlic cloves, sliced
- 3 tbsp extra-virgin olive oil
- 2 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- Optional: olives and feta cheese for topping
Method
- Preheat oven to 400°F (200°C).
- Toss the vegetables and garlic with 2 tbsp olive oil, oregano, thyme, salt, and pepper.
