Ingredients:
- 4 cups seedless watermelon, cubed
- 1 large cucumber, thinly sliced
- ½ cup crumbled feta cheese
- 2 tbsp fresh mint, chopped
- 2 tbsp fresh parsley, chopped
- Juice of 1 lime
- 1 tbsp extra virgin olive oil
- Salt and pepper to taste
Method
- In a large mixing bowl, combine watermelon cubes and cucumber slices.
- Gently toss with lime juice, olive oil, salt, and pepper.
- Add chopped mint and parsley, mixing lightly to distribute.
- Top with crumbled feta just before serving.
- Serve immediately chilled, or refrigerate for 30 minutes before serving.
