A light and flavourful asparagus dish, perfect as a side for any meal.

Ingredients:
- 500g fresh asparagus, trimmed
- 2 tbsp olive oil
- 3 garlic cloves, minced
- ½ tsp salt
- ¼ tsp black pepper
- Juice of ½ lemon
- Zest of ½ lemon
- 30g Parmesan cheese, grated
- 1 tbsp chopped fresh parsley (optional)
Method
- Prepare the asparagus: Trim the woody ends of the asparagus and rinse them under cold water.
- Heat the pan: In a large frying pan over medium heat, heat the olive oil.
- Sauté the garlic: Add the minced garlic and sauté for about 30 seconds until fragrant, but not browned.
- Cook the asparagus: Add the asparagus spears to the pan, season with salt and black pepper, and toss to coat. Cook for 5-7 minutes, stirring occasionally, until tender-crisp.
- Add lemon and Parmesan: Squeeze fresh lemon juice over the asparagus, sprinkle with lemon zest, and top with grated Parmesan. Stir briefly to combine.
- Serve immediately: Garnish with fresh parsley if desired, and enjoy warm as a side dish with grilled fish, chicken, or pasta.
Notes
Dairy-Free Option: To make this dish dairy-free, simply replace the Parmesan with nutritional yeast for a savoury, slightly cheesy flavour. For added texture, toasted pine nuts or slivered almonds make a great alternative topping.
