- 85g feta cheese, cubed
- 3 vine ripened tomatoes, de-seeded and cut into chunks
- 10cm cucumber, cut into chunks
- 55g black olives
- 1 tsp dried oregano
- Freshly ground black pepper
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- Place feta, cucumber, tomatoes and olives in a bowl.
- Whisk together the olive oil and lemon juice, black pepper and oregano to make the dressing.
- Pour the dressing over the salad, mix well and serve.
