RECIPE: MEDITERRANEAN BEAN & VEGGIE BAKE

This hearty, plant-based dish is inspired by the ingredients commonly found in Mediterranean Blue Zones like Ikaria and Sardinia.

Serves 4

Ingredients:

  • 2 cups cooked cannellini beans
  • 2 zucchinis, sliced
  • 1 red bell pepper, diced
  • 1 red onion, chopped
  • 200g cherry tomatoes, halved
  • 4 garlic cloves, sliced
  • 3 tbsp extra-virgin olive oil
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Optional: olives and feta cheese for topping

Method

  1. Preheat oven to 400°F (200°C).
  2. Toss the vegetables and garlic with 2 tbsp olive oil, oregano, thyme, salt, and pepper.
  3. Spread the mixture on a baking sheet and roast for 20 minutes.
  4. Add the beans and remaining olive oil, mix gently, and roast for an additional 10 minutes.
  5. Serve warm with optional olives and feta.
